The aseptic banana puree is produced from sound, bright bananas that have been ripened to optimum maturity to assure a fully developed banana flavor. Bananas are firm and free from disease, mold, damage, rot and peel rag. The puree is creamy yellow with no off flavors. The taste is sweet of fully ripe bananas.

Appearance: Bright, Creamy yellow
Color: L value > 60 (Hunter colormeter)
Flavor and Aroma: Typical of fully ripened bananas.  Free of any off odors or flavors.
Brix: 21-25
Acidity: 0.25 - 0.35 % (Expressed as citric Acid)
pH: 4.7 - 5.1
Consistency: 2.5 – 7.5 cm (Bostwick @ 25°C 30 sec

​Frozen Banana puree and concentrate, is produced from bright bananas that have been ripened to optimum maturity to assure a fully banana developed flavor. Bananas are firm and free from disease, mold, damage, rot and peel rag. The puree is creamy yellow with no off aromas or flavors. The taste is sweet of fully ripe bananas. During the processing of concentrate the aroma is recuperated and added back to the product.
